The pastry I taste for quality keeps disappearing

I run a little breakfast place, and my portion-control blind spot isn’t dinner. It’s the four or five “quality bites” between 7 and 10 a.m. — a sliver of coffee cake, a spoon of soup, the broken cookie nobody will buy. None of it feels like eating, so I never logged it. Then I wondered why my loss had slowed. Last Tuesday I set a tiny saucer by the register and made myself put every taste there. By close it held half a muffin, two soup spoons, and three pastry edges. Seeing it made me laugh, then wince. I’m not aiming for perfect, just honest. Does anyone else have a work taste-test loophole they had to close?
