two kids, sports practice, and homework mean our real dinner window is about eleven minutes. I keep trying to make an after-school shelf in the pantry that doesn’t require cooking or thinking: turkey sticks, roasted edamame, little guacamole cups, and a bowl of washed grapes. It works on Tuesdays and Thursdays, which are our worst nights. Mondays I still end up scraping mac and cheese off a plate and eating it standing up. Some nights I’m not hungry until later, so I just nibble kid leftovers and skip my own food completely.
