Gallbladder out, scale flat, and my patience is thin

Had my gallbladder taken out six weeks ago, and I'm still waiting for my body to get back on script. Before surgery I was losing about a pound a week on this med and walking 2.5 miles most mornings. Since then I've been flat at 207 for almost a month, my energy tanks by 2 p.m., and I've started picking at crackers at night even when I'm not really hungry. I know healing isn't linear and I'm not expecting magic, but the stall is grinding on me. I'm still tracking protein and going for short walks, but some days it feels like I'm rowing with one oar. For anyone who's had theirs removed: how long did it take before your appetite and energy felt predictable again? Did your weight loss resume on its own, or did you have to rebuild your routine from scratch?
