I’m trying to stop treating protein like a puzzle I solve at 8 p.m. when I’m already tired. This week I made a big tray of chicken thighs, shredded them, and kept a container next to the edamame in the fridge. Lunch has been 1 cup of the chicken plus 1/2 cup shelled edamame and a little salsa — not fancy, but I actually finish it. My small win: three workdays in a row with no 4 p.m. vending machine detour.
